Hand Shaking Modelling

I am newbie on modelling concept;

I took some data by sensors on glove.. I try to detect shaking on hand and transfer that movements on 3D or 3D-like graphics that make understanding of movement easily.. I have data like X,Y and Z directions.

What kind of application or programming language to do this animation ? I preper to use java, C++ but another other suggestions can be done.
